The vine growth begins in the very last days of March, 5 days ahead the 30 previous years average.

The weather is very classical, with important rains in May.

The flowering takes place between the 1st and the 16th of June in good conditions, enabling a good harvest. The summer is cool, often cloudy, which provoques a slow and late maturity.

The harvest is spread out: the first part of the merlots are collected on the 24th of septembre; the second half 8 days after.

The cabernets' harvest only takes place on the 10th of Octobre.

The cuvée

Chérubin 2007 is composed of 67% of merlot and 33% of cabernet grapes.

The first vat ferments very rapidlly.

Then, the two other ones, more mature, have longer vat periods. The contact average is 25 days.

After the flow, the wine is put into new barrels (selection of woods from the centre of France).

After a 15 months ageing, the embottling is done in the very last days of May.

The tasting

Great success of the label (appellation) this year.

Fresh colour; very deep red.

Very powerful nose, with an expression of coolness and blueberry.

Strong start, with dimension.

Very fruity play between.

Rising, fleshy and long-lasting finish, with beautiful balance and volume.

It is a wine with a high potential of evolution, which will take all its dimension in the following years. It will have a very long life expectancy (certainly around 15 or 20 years).
